BINIFADET WHITE

Made with grapes selected from the best plots of our Binifadet estate in the south of the island of Menorca, characterized by its calcareous soil.

Cold skin maceration. Alcoholic fermentation at 17°C in stainless steel. Aged on lees for 5 months. Cold stabilization to avoid precipitates. No malolactic fermentation or storage in barrels.

TASTING NOTES

Very pure, clear straw yellow colour. Powerful, complex and above all fruity aroma. Notes of stoned fruit (peach) stand out. Well-balanced with a wide range of herbs and white flowers reminiscent of the Mediterranean forest. Highly flavoursome and structured palate with a silky and fruity finish that gives it a fairly persistent aftertaste. A wine with a strong personality that will not go unnoticed, fruitiness and persistence being its hallmarks.

SYRAH
Syrah

Fermentation in stainless steel at 23 °C. Malolactic fermentation in stainless steel. Aged for three months in American oak barrels and six montha in the bottle.

TASTING NOTES

Cherry-coloured red wine with a bright rim. Powerful aromas of red fruit and sweet spices (vanilla, coconut) characteristic of its aging in barrels. Smooth, flavoursome and creamy on the palate with highlights of ripe red fruit well balanced with smoky and toasted notes, giving it complexity.

Some of the wine has finished its fermentation in French oak barrels and the rest in stainless steel at 17°C. Aged on lees for 4 months. Cold stabilization to avoid precipitates. No malolactic fermentation.

TASTING NOTES

Copper-pink shade with bright reflections. Very elegant and smooth aroma. When the glass is turned it shows a pleasant range of reminiscences of rose petals, wild red fruits and sweet spices produced by its storage in French oak barrels. Very fresh, pleasant and flavoursome palate. Elegant and fruity rosé wine, with a very meticulous production process, which has been stored briefly in wood to give it greater complexity.

SWEET MUSCAT

Moscatel

Fermentation in stainless steel at 17 °C. Fermentation interrupted with cold, leaving 80g./litre of sugar.

TASTING NOTES

Bright golden colour white wine. Aromas of white flowers, jasmine, orange blossom and fresh green fruit. Very flavoursome, fresh and fruity on the palate, with notes of white fruit. Balanced and with a lingering aftertaste.

SURPRISINGLY delicate and elegant.

SWEET MERLOT

Fermentation in stainless steel at 22 °C. Fermentation interrupted with cold, leaving 150g./litre of sugar. 12 months in oak barrels and 4 years in the bottle.

TASTING NOTES

Dark crimson colour red wine with an orange rim. Powerful aroma of fruit liqueur, sweet spices, toasted notes characteristic of its aging in barrels. Sweet, toasted, spicy and syrupy on the palate. Lingering aftertaste with a pronounced flavour of candied fruit.

TASTING NOTES

It has a bright yellow colour with golden reflections and fine bubbles that emerge like beads. It has a powerful and complex aroma which includes touches of stone fruit, well balanced with bakery and pastry notes typical from the aging in rhyme. In the mouth is fresh, powerful and tasty. The bubble is creamy as well as refreshing.

TASTING NOTES

It has a bright pink colour with red tinges and fine bubble. It is fresh, powerful and fruity on the nose. It has aromas of red fruit and dried flowers, which give complexity. In the mouth it is creamy and refreshing thanks to its fine bubble. The aftertaste is long and tasty, with long lasting touches of fruits.

90% Merlot, 10% Cabernet Sauvignon

Elaborado con uvas seleccionadas de las mejores parcelas de nuestra finca Binifadet, al sur de la isla de Menorca caracterizado por su suelo calcáreo.

Vendimia manual.

Elaboración: fermentación a 23ºC en inox. Fermentación maloláctica en inox. 10 meses de barrica de roble francés y 6 años en botella.

NOTA DE CATA

Vino tinto de color rojo intenso. Mezcla de matices de cerezas y frutas del bosque, con toques torrefactos de la barrica. Su paladar es amplio, carnoso y graso. Está tapizado por taninos dulces. El final en boca es muy persistente.
